Club Soda Belgian Waffles 2 cups Bisquick Baking Mix 1 and 1/3 cups club soda 1 large egg 3 Tablespoons canola oil Makes 4 large waffles. Mix all ingredients together well. Pour into Belgian waffle maker for extra light waffles. It's the club soda that makes them extra light. Really works!

Apple Almond Pancakes (Grain free, high protein, Paleo diet friendly, inspired by Mark’s Daily Apple) 3 eggs, beaten 1 cup almond meal 1/4 cup no sugar added applesauce (optional, but really moistens pancakes) 1 apple, chopped 1/4 teaspoon baking soda 1/4 teaspoon vanilla extract 1/4 teaspoon cinnamon Mix all ingredients in a small mixing bowl. Scoop about 1/4 cup batter on a hot, buttered griddle (keep pancakes small for better cohesion). Cook for a few minutes, until light brown on the bottom. Flip pancakes and cook for a few more minutes. Makes 8-10 silver dollar sized pancakes.
“HEALTHIFIED” DAIRY FREE CARAMEL SAUCE 1 can (2 cups) coconut milk 1 cup Swerve 2 TBS coconut oil 1/4 tsp vanilla Bring coconut milk and natural sweetener to a boil and vigorously simmer for 40-60 min until slightly brown in color. The longer you simmer, the thicker it will become. Remove from heat and mix in oil and vanilla. Cool. Makes 12 servings.
